But we must not forget that the pairing of food and wine is not always respected, since colours were invented to suit all tastes, and there are people who love a certain wine, who always want to accompany their food with that particular wine, whatever type it may be.

When buying a wine to accompany a meal, we must take into account some considerations:

a.-We must respect the order of the wines in the meal: starter, first course, etc...

b.-We should know the composition of the meal (mild or strong), to choose the type of wine.

c.-Never drink more than four different types of wine at the same meal.

Contrary to what many people think that cheap wine is used for cooking, any type of wine can be used, and at any price.

Many of the great chefs use high quality wine to prepare their dishes. The reason is that cheap wines are usually wines of low quality and taste, and logically this way we will not transmit exquisiteness to our dishes. By choosing a non-cheap wine we are ensuring greater flavour.

Therefore, we can use any type of wine for cooking.

Having said that, which wines should we use to cook each type of dish? 

In general, we will use those wines that transmit greater sensations and better aromas. Dry red wines and white wines are the most recommended. Red wines transmit and add colour to the food, and white wines add acidity.

    • For cooking sauces.

    • For red meats that are cooked slowly: wines made from Syrah grapes are recommended.

    • For meats that are cooked quickly: best to use wines made from Pinot Noir grapes.



  • White wines:

    • For strong meals: use aromatic whites.

    • Fish dishes: wines with Sauvignon blanc.

    • Seafood meals: fruity wines, young wines, Albariño and cavas.

    • White meats: dry white wines.

    • For stews and casseroles: Port wines are recommended.

    • To improve the flavour of soups, stews and sautéed dishes: Sherry wines are recommended.
